Tikka masala, one of the most vibrant spice blends of all time, was born in Britain by a Pakistani chef. Legend has it that this unique spicy mix was invented in the 1970s when a customer visiting an Indian restaurant in Glasgow ordered for some tomato ketchup as an add-on to his meal! (Don't worry, we don't use any tomato ketchup in the spice blend!). Even if it's treated as one of Britain's national dishes, Tikka masala, the luxuriant, warm flavors of this creamy, orange-colored curry sauce very clearly originate in the Punjab region.
Tikka masala, famous for its mellow yet strong aromatic charm, works best when cooked with chicken. You can add yogurt and cream to it to make sure the heady mix of coriander, cumin, cardamom, paprika, ginger, garlic, turmeric, annatto, chilli, salt, and citric acid melts in your mouth. For more luxurious escapade, dash-in some ground almonds at the end of the cooking. Don't forget to bring out the naan bread to soak up the sauce!
