Ras el Hanout (Moroccan Curry)
Ras el Hanout (pronounced 'rahs el ha-newt') is known as the most exotic spice in the world. It is the ultimate spice experience and the perfect counter to complex Indian spices. This curry blend is not used in daily cooking in Morocco but is reserved for special occasions.
The ingredients in Ras el Hanout, which means 'head of the shop' or 'top shelf', vary from one souk (spice shop) to another. This is because each shop owner selects his or her best spices to add to the mix, giving this very special curry its name. Each souk owner will then often boast of having the region's most sought-after spice blend. A high quality Ras el Hanout is a careful mixture of choicest and most diverse spices, evoking a summed up flavor quite distinct from the individual ones. There are hundreds of individual combinations of this particular spice, some that might even include surprises such as hashish or Spanish fly. Don't worry, our blend spares you the hashish and Spanish fly! We are, however, careful to maintain the delicate flavor of lavender, pepper, and rose petals.
If you are new to the Ras el Hanout experience, you will find it to be a curry with a flowery aroma, spicy (not the fiery hot) and subtle in its layered complexity. Ras el Hanout is used to add versatility to chicken and vegetables. You can use it as a marinade with olive oil and lemon extract, you can add half teaspoon into a cup of rice, or you can use it as a rub on your favorite meat.
