Za'atar has a fascinating and sometimes sordid history, but it doesn't detract from this delicious seasoning. Traditionally a blend of oregano, thyme, sumac, and toasted sesame seeds, za'atar can vary by country, region, and even home. It is often used as a condiment, but it is particularly delicious mixed with olive oil and spread over flatbread before baking or vegetables before roasting. Za'atar can also be used as a rub for chicken, lamb, or fish.
