 Za’atar Breakfast Slam

5 red potatoes, diced (keto/paleo sub: cauliflower)

1/2 medium onion, diced

2 cloves garlic, sliced thin

1/3 red bell pepper, diced

Small handful of green beans, ends trimmed and diced

3 T avocado oil

1 T Seasonality(c) Za’atar

Salt and pepper to taste

Fresh parsley

1/4 avocado, sliced


Heat a skillet over medium heat. Add avocado oil. Let it get hot, then add potatoes. Spread out your potatoes so they’re not overlapping. Cook about 6-8 minutes until golden on one side. (Pro tip- DON’T TOUCH THE POTATOES! Let them sit on one side this whole time. It will make them browned and crisp instead of mushy and greasy)


Add garlic, onion, red pepper and green beans. Add spices. Continue to cook until everything has a lovely color and texture, about 6 more minutes.


Garnish with parsley, avocado and a fried egg. Or leave off the egg for a vegan friendly treat!
